i think it's interesting that lestat's refusal to take responsibility for the harm he's done seems to be link to the fact that he feels (re) born evil as a vampire. if he didn't choose to be a vampire (evil), then it's not his fault for being cruel and a killer because he's just acting according to his nature- louis is the one who is broken for having a conscience. what truly seems to make him feel guilty is that he enjoys the wicked things he does, but lestat is such a light person he can't bear the thought of a life where he has to be miserable. so he has to make being evil fun.
that's why louis's eating habits get under his skin so much because it feels like a judgment on lestat for being able to enjoy hunting. (and louis certainly is judgmental to be fair, but also lestat is incapable of not making everything about himself.) and it's why claudia not being grateful for lestat giving her (un)life gets to him.
to lestat, saying it would have been better for claudia to die feels like an affront to his core belief that life is better than death, so to live as a vampire is better than to die as a mortal. so in turn he rejects that he bears responsibility for the harm he did (or that claudia should feel upset about having to kill other people to survive), because he did her the ultimate good deed by giving her life, so everything else must be secondary to that.
